Trying to use Softaculous to install “SquirrelMail”, and whenever I search for SquirrelMail and select it, it gives me a pages that says “The INFO.XML file could not be found! Please report this to the server administrator.” How do I install it now?

This is an issue in our Softaculous server that we would to fix.
However, the version in Softaculous is the officially released version, which is from 2011 and is never going to work on any server that has been updated in the last 10 years.
If you insist on using SquirrelMail, SquirrelMail has newer, unreleased versions that supposedly work with PHP 8 which you could try instead. But I would suggest trying more modern software like RoundCube.
Is it possible to host Roundcube on your servers?
It is technically possible (though if you want to install plugins on it, you’ll have to use Composer on your own computer). However, it should be noted that InfinityFree does not offer an email server or functionality anymore. So you’ll want to have your own email server or service to connect to via IMAP and send messages via SMTP. See this guide from Roundcube’s Github wiki for more information.
