Is it possible to change the default timeout when logged in to the FTP server?
No. Why would you want it changed? All you have to do to reconnect is to start a new transfer.

That timeout doesn’t matter as your FTP software would simply reconnect and reauthenticate itself to grab the things you told it to. The timeout won’t affect in-transit files according to FTP protocol.
Smarter software like FileZilla uses a combination of cached results + refresh once available so it does not even feel like it has ever disconnected.
