If your server is outside of China then you don’t need a license, many people chose to put it on servers outside of China because of this

I don’t think there is an inherent benefit to using MongoDB over using an SQL database for performance. If you want good performance, you need good schema design, efficient querying, effective use of caching, and just powerful servers.
I’m not a fan of MongoDB myself. “Schemaless” databases are misleading. At some point, your application will expect data to have a certain format, and at least with an SQL database you have guarantees that data will look like what you expect. And both PostgreSQL and MySQL have support for JSON columns if you do need some unstructured data for specific functionality.
